"The Great Italian Grilled Sandwich"

By Chef Ronnie Barcy

Excuse me, Mr. Webmaster, I was very impressed with your web-site. I found it to be very interesting. Especially the way you described the way you make your customized grilled cheese sandwich. It really sounds like a fascinating, culinary experience for any true food lover. I myself have all the necessary ingredients and shall I say, shall indulge myself, in partaking in your delicious recipe! And may I say that it sounds " damn good!" buddy, "damn good!", but what about my "Great Italian Grilled Sandwich"? Hmmmmmmm?
Here it goes:
(1) take two descent sized slices of Italian bread cut on an extreme bias.
(2) spread Mascarpone cheese evenly on both sides.
(3) slice fresh mozzarella and apply generously to the sandwich. Set aside.
(4) take Pancetta, which is Italian bacon. Slice approx
1/8"- 1/4 " thick fry pin-wheels of Pancetta in Bertoli Extra Lite Virgin Olive oil, till dark golden brown. Place on plate with paper towel to drain off
excess grease. Then apply to the bread.
(5) add 1/4" slices of tomatoes preferably beef-steak
or plum garden tomatoes.
(6) take a skillet, well heated w/ approx. two table
spoons extra lite virgin olive oil to pan, also apply
1- table-spoon sweet-cream butter.
(7) before closing sandwich add roasted garlic, fresh
basil. Now close sandwich. Put inside skillet, cover
let stand for 5 min. on each side, medium to low heat
for the perfect Italian Grilled Sandwich!
Serve w/ a glass of homemade lemonade, iced-tea or
just a good old fashioned Frozen mug of Sewarts
root-beer on tap!
